I have a WDTV Streaming Media Player, which has the encrypted firmware version that can't do the nifty things that the WDLXTV project enables. I stream to the WDTV SMP over 2.4GHz wifi using a Linksys WRT400N router.
I have tried both OpenWRT and Gargoyle on this router. With OpenWRT, the extra featureset is very useful to me (web hosting, VPN, etc.). However, the WDTV SMP just will not stream reliably with OpenWRT on the WRT400N while with Gargoyle, streaming seems to work as designed.
One issue I've noticed is that with OpenWRT, the WDTV SMP regularly ignores DHCP offers from the router. I don't know enough about Gargoyle to know where to look for log output (if any exist).
I'm not a command line fan; I use WinSCP/Putty only as necessary and I much preferred using Luci to configure my OpenWRT installation. I gather that Gargoyle is a simplified (therefore faster) UI overlay on top of OpenWRT whereas Luci has more developed modules for interfacing with additional router functions (and responds like a dead horse to a whip).
So to restate the post title, what is the difference between OpenWRT's wifi driver and Gargoyle's? Why am I seeing a difference in stability between the two firmwares with streaming and DHCP?

Gargoyle is based on the Backfire branch of OpenWRT. There is no difference in Wifi drivers between Backfire and Gargoyle.
You may have found some difference between Backfire and what ever version of OpenWRT you are using. That's the only explanation I can offer.

I was running the SquashFS build of Backfire 10.03.1 RC6. What's the latest Gargoyle built on?
Seriously, it's like night & day. No trouble at all with Gargoyle and almost unworkable with OpenWRT. Something has to be different.

Generally Gargoyle is built with whatever the Backfire head is at the time of the Gargoyle release.
