I have my modem in bridge mode and I assume it's connected since it's reporting a WAN IP and, well... it works 
But is there a way to monitor any of the connection stats, like sync speed, errors etc etc? Or anyway to force the connection to restart short of restarting the Gargoyle?

If your modem has a web interface that contains these stats and the ability to restart the connection you can use that but there is no way from the Gargoyle GUI to restart the modem connection.
From the command line you can perform an 'ifdown wan' followed by an 'ifup wan' which should restart it.
