I just bought a new TPLINK Archer C7 1750 V5.0
I see in the downloads version 2.0 only..
Is there any version for this new Archer 5.0 ?

The stable version has numerous security holes and bugs.
Experimental and stable are just labels.
A new "stable" is coming this week probably, but as you might expect, it's just a graduation of the 1.11 branch to 1.12.
So if the label makes you uncomfortable, check back in a week or so

Probably. It depends how long the build process takes, loading it to the site, and of course this all happens around someone's personal schedule.
