Hi y’all,
I’d like my router to reboot twice a day vs once (the DHCP assignment seems to get messed up randomly every few days). Is that possible via a method other than the GUI (which is all I currently know how to use)?

Use the GUI to set the reboot for your first preferred time.
Then use the command line to edit
/etc/crontabs/root
Find the line for the reboot command, then modify the time command to suit.
