I don't recall Gargoyle ever supported changing country in the GUI.
You can use shell:
uci set wireless.radio0.country=??
uci set wireless.radio1.country=??
uci commit wireless
wifi or reboot
radio0 and radio1 works for wdr3600 - on other routers use 'iw reg get' to see their radios.

Is there a source code we could complile our own LEDE Gargoyle version from? I have a new Raspberry Pi 3 B+ I'd like to test out on and see.

Also with your wdr3600 do you get the 2.4GHz channels from 1-13 (if your European of course?) seem like v1.10.0 im only getting 1-11

Default SSID's.
When selecting Wireless Mode AP right after flashing (or after firstboot) the SSID's are "OpenWrt" and "OpenWrt"
Save.
Then Disable and save.
When Wireless Mode (AP) is selected again the SSID's are now "Gargoyle" and "Gargoyle 5GHz"

As i believe america uses 1-11, and the rest are using 1-13
5GHz band i no idea but from my own ISP modem combo i can see channels 36,40,44,48,52,56,60,64,100,104,108,112,116,132,136,140 @ 20 / 40 / 80MHz
This is a feature I intended to add to the GUI but it needs to be done in a proper way to avoid wrong doings.

Hi there mate. this build of gargoyle is building from the 17.1.4 branch of openwrt the new R-Pi is not supported sorry.
