Once you're on Gargoyle (Openwrt), you should only use Sysupgrade.
If you want it to be a fresh install, just don't tick "Preserve Settings" and everything will revert to default.

Fresh install as in currently on OEM? Yes
Otherwise, sysupgrade.

It would be better to use the latest 1.11.x also.

No clue, but it was one of the main devices I used for testing 1.11 when getting it ready for release so I'm reasonably confident.

1.11.0 has working Wi-Fi for that device. Problem is unrelated, and doing a restore from a different device definitely caused you issues.

Yes that will be fine to use. Telstra NBN connections use DHCP so you can actually just set the Telstra modem to bridge mode and have Gargoyle do everything for you. You can't post attachments, please host them externally.
I'd suggest that using WDS probably won't work well as it isn't well implemented between models/manufacturers.
