I've been using Gargoyle for years now starting on tp link 1043nd. Recently, in the place where I live fiber has been put and I was connected with 1 gigabit network rather than lte based used previously. As I've been using older Archer with 100Mbps wan port I decided to replace it to (as I believe) the newest one with strongest hardware and 1Gbps wan port Archer C7 v5 working with Gargoyle.
When I connected it using stock firmware the speed of traffic coming from web (through wan) on lan ports was approximately 950Mbps, however right after installing Gargoyle, with QoS off, no additional routings, no DHCP entries, etc ... maximum I was able to achieve experimenting with MTU was 150Mbps.
I've went through couple threads on various forums, where the overall assumption was that this device is too weak to handle such a traffic (with Gargoyle/OpenWRT), however from some reason on stock firmware it can. Do I have set something wrong or simply did I hit the wall? Also in case this is the second case, is there any hardware recommended to handle 1Gbps? Apart from setting up a dedicated PC.
I don't care about WiFi as I have separate switch with dedicated WiFi APs. What I do need is simple QoS, DHCP, traffic metrics and adblock (as the one in Gargoyle did the job for me)

It’s too weak, as per your research.
The stock firmware can do it because there’s no complex firewall modules like bandwidth monitoring etc.
I don’t necessarily recommend it due to the wifi issues but the WRT3200ACM/WRT32X can do the speed you’re asking.
As can the GLiNet MT6000 which should have less wifi issues.

In addition to Lantis' suggestions, in some markets the Asus RT-AX59U can be found at attractive prices too - a little less straightforward to flash than the GL-MT6000 though (requires a 3rd party "transition" image be flashed first but this worked fine for me); recommend enabling packet steering (applies to GL-MT6000 as well).

I've tried with OpenWRT, and I've managed to go up to 930mbps with flow offloading turned on. As I'm however still slightly confused by the complexity of configuration, despite I've managed to do most of the things I'm thinking to maybe make another step up, as thre are some other hardware limitations.
Which device you'd recommend to go with x86? I've seen couple posts with j4125 mini pc. From connectivity perspective I do care only about two LAN ports.

I don't like recommending devices.
Devices drop in and out of support at a moments notice and may never come back. They might have weird or unexpected quirks. It comes with an expectation of support and it delivering on what you expected.
