In the end, I went with

TP-Link TL-WA1201, Wireless Access Point, Wireless AC, 1.2 Gbps, AC1200

Ubiquiti EdgeRouter X ER-X, Router

Not top of the range but it will be interesting to see the performance

The Asus AX54 has recently been added to the OpenWRT snapshot:
committer Hauke Mehrtens <hauke@hauke-m.de>
Mon, 13 Feb 2023 06:27:45 +1300 (18:27 +0100)
...
ramips: add support for ASUS RT-AX54

Specifications:
- Device: ASUS RT-AX54 (AX1800S/HP,AX54HP)
- SoC: MT7621AT
- Flash: 128MB
- RAM: 256MB
- Switch: 1 WAN, 4 LAN (10/100/1000 Mbps)
- WiFi: MT7905 2x2 2.4G + MT7975 2x2 5G
- LEDs: 1x POWER (blue, configurable)
1x LAN (blue, configurable)
1x WAN (blue, configurable)
1x 2.4G (blue, not configurable)
1x 5G (blue, not configurable)
It looks like a reasonable choice for my needs. And given my need is not urgent, I'm going to keep an eye on it and come back here when it's ready for production OpenWRT use.

To be fair, it looks like I've started my search for a new Gargoyle router at just the wrong time, with technology going through a transition to the next generation of platforms, and of course no retailer stocks the previous generation...

This is always the case in my opinion

I come to the conclusion that 3rd party firmware is not popular with router manufacturers.....

Late 2023 would be a good time to circle back on that device I think :)
