I installed Gargoyle on a tp-wr841n.
I asked in another thread about installing an email plugin but it doesn't seem to be a good idea.
I absolutely need to receive every day data about the quota used. The router is in a remote location.
What do you think about creating a script that uses scp to transfer a file to a remote server (via cron)? Is there any security or stability risk?

Seems ok to be.
I'm not sure about the security of SCP, but it is only an outgoing connection. Probably not too problematic.
