I'd like ho have:
- 192.168.1.2 - 192.168.1.99 -- personal devices (PC, laptops, wearables) with statically assigned IPs (in DHCP, not configuring manually it on devices)
- *.100 - *.199 -- dynamic (anything that is *not* assigned statically)
- *.200 - *.254 -- local services (NAS, printers, web cams, other APs) with statically assigned IPs (in DHCP, not configuring manually it on devices)
Currently I'm:
- Specifying IP range for DHCP as 192.168.1.100 - 192.168.1.199.
- For devices in ranges 2-99 and 200-254 manually assigning IP (by MAC) in the DHCP.
Is it correct setup?
Or, as devices outside range 100 - 199 are also getting IP from DHCP the range should be set as 192.168.1.2 - 192.168.1.254 with some devices set as static?

How you have it configured is fine.
All devices will receive a dynamic address inside .100-199, unless they have a static assignment elsewhere.

However, I wanted to double check if it is OK that some IPs configured as static on DHCP are outsize of DHCP range as I faced some issues with the most recent version of Gargoyle and noticed discussion about IP inside/outside DHCP range in "Gargoyle 1.15.x OpenWrt 24.10 beta - 2026-01-06" thread.

That issue was because the router itself was inside the DHCP range.
I have run my network similarly to yours for years. 10-39 for home devices, 40-59 for me, 60-79 for my wife, dhcp from 100-249.
