My router is station firefighter share arround 10 to 15 clients
Have speed 200Mbits download and 100Mbits
TP-Link Archer C7 v2
version 1.14.0

My idea was to improve the download speed a little, to be fast at first and then slow down if another user starts using the network.

As an aside, I’m not sure your Archer can fully keep up with 200/100 and QoS enabled. You might be pushing it.
I would run a speed test with a wired client to confirm.

what values do you recommend Lantis?
for keep up with 200/100 QoS need powerfull router?
my question is whether I can use QoS as a default if that's the right thing to do, or do I need to put rules in place?
I wanted to have it well optimised so that if I have 30 people accessing it
speedtest with wired only get 30 Mbits down upload can do 80 Mbits

The default rules will fairly distribute the bandwidth amongst all users. You could add rules to try and make DNS and web browsing more responsive, otherwise it is fine.
If you can’t do more than 30/80 wired then your router is a significant bottleneck. Your 200/100 is wasted.
