There a lots of mesh Setup Guides for Openwrt and special firmware like

are there guides for Gargoyle too, so i could put all my router with gargoyle together in a mesh setup maybe?

If the mesh type you want is supported by OpenWrt, then it can be configured in Gargoyle. However the GUI does not support it so you must do it manually.

For this i will use some TP-Link TL-WR841N/TP-Link TL-WR842N mix. But i am not sure about the server, if it has to be mesh too or can my wrt32x with gargoyle installed.

I separated wireless mesh from the gateway features. I use gargoyle for wired only direct to cable modem. Then I use orbi 3 pack mesh wired into my linksys wrt32x for mesh features. Works way better than putting it all on my archer c7v2.
