Try changing the IP address of the DNS server, maybe it will improve (for example 1.1.1.1 or 8.8.8.8). The "AdguardHome" package is part of OpenWrt 21.02 and will be for Gargoyle in a very long time.
The Youtube adblock list is unmaintained and obsolete.
I'm using the "Adblock" package from OpenWrt with manual configuration and it suits me.
