I am trying to setup QoS for Google Chat voice plugin. The Gargoyle drop-down menu doesn't show Google. Any idea what the best way to do this is? If not, maybe I could observe the traffic of a phone call and use that information to configure it? Or do some packet sniffing maybe...

The layer7 stuff does not work reliably in my experience.

You will have to experiment with other methods of discriminating Google voice chat traffic.
