When setting up access restrictions, you can set a time for the WIFI to shut off, but I need clarification. I'd like it to shut off at 9pm and come back on at 7am the following morning. So if I specify in "hours active" (21:00-07:00) for Monday, will that work? Or do I have to make it 21:00-00:00 (Monday), 00:00-07:00 (Tuesday)?

The second one, but note that days end on 23:59 and begin on 0:00. You need to fix your Monday time.
