How do I set up my quota to record ALL data being transferred? I have a bunch of quotas for multiple IP's, IP ranges etc. What I want to do is just track how much of my total data cap is being used, but not limit it.

Go to Status > Bandwidth usage.
Down bottom under Bandwidth Usage Table change Display Interval to something like days, then you'll be able to see total usage per day etc.

Sorry I will just clarify this a bit more. I have a data plan that gives me 25gb, with free data between 2am and 8am.
What I want to do is account for all of the data being used on my data cap.
The monthly quotas I currently have set:
Myself: 8gb - No quota for during the free data times
Flatmate 1: 8gb - No quota for during the free data times
Flatmate 2: 5gb - Quota set 24/7
NAS: 0gb - No quota for during the free data times
VoIP: 2gb - No quota for during the free data times
All other DHCP assigned IP's: 200mb - Quota set 24/7
