I generally start a custom build by unchecking all gargoyle stuff and then go into admin section and add the gargoyle package which adds all the deps and it seems the wolfssl stuff gets added. Indeed, hardware/software offload are probably akin to a footgun in Gargoyle, which is a good reason for them never to make it into the UI the way they are in OpenWrt.
